To create The Balvenie PortWood 21 year old single malt whisky, a marriage of rare Balvenie is transferred to port casks, or pipes, which have held fine port wines. Here it is sampled regularly by The Balvenie Malt Master David C. Stewart MBE to ensure that just the right amount of character is imparted by the port casks, enhancing and developing the single malt whilst preserving its original characteristics. Considered by many to be David’s finest creation, this whisky is one of his proudest achievements and has won an array of highly coveted industry awards since its release in 1996. In duty free, The Balvenie PortWood Aged 21 Years is non chill-filtered and bottled at a higher strength of 47.6% abv.
They handle every aspect of creating The Balvenie 12 year Doublewood, from the first seed to the final approval of Malt Master David C. Stewart, whose nose and palate have been sharpened at the distillery since 1962. The Balvenie presents the ultimate line of painstakingly crafted Scotch whiskies. The Double Wood ages 12 years in American Oak Bourbon barrels, then finishes in Spanish Oak Sherry casks. The final product carries the sweet fruit from the Sherry, charred notes from the Bourbon and the character of a meticulous crew of craftspeople. This Speyside whisky tastes fine after dinner or with a Maduro cigar. The nose carries dark chocolate, raspberries and fresh bread. The taste blends berries and cherries with pepper and exotic spices. The finish is long and viscous with lingering hints of red fruit. The 12 Year is a great addition to your Scotch collection. You'll have some Highland, Islay, Lowland and Cambeltown, but this is one of the only whiskies you'll find aged in two different barrels. It sets itself apart.
ANDREW MACKENZIE’S MASTERPIECE The Dalmore 12 year old, with its intricate aromas and flavours, is recognised as a whisky with character far beyond its age. This was Andrew Mackenzie’s original masterpiece and stood apart from the norm of the day. At a time when it was standard practise to mature whisky for no more than 6 years, Andrew Mackenzie demonstrated his pioneering character by doubling the maturation period. His boldness truly paid off, The Dalmore 12 year old still stands apart as an exceptional whisky today, as it did then. Matured for an initial nine years in American white oak ex-bourbon casks, the spirit is then divided for its final flourish. One half remains in the bourbon barrels, while the other is transferred to exclusive 30 year old Gonzalez Byass Matusalem oloroso sherry butts before they are reunited to create this phenomenal whisky.
The Dalmores dynamic and varied fledgling spirit benefits from longer than tuypical maturation 12 years, instead of the more regular 10. Judicious selction and the precisce balance of American white oak and Oloroso sherry wood, deliverys a vibrant expression, robust yet elegant. Tasting Notes, deep, amber in color with orange marmalade, aromatic spice and leather on the nose. Elegant and rich on the palate with intense citrus, hints of sweet vanilla pod and oak nuances appearing. A long and sweet finish enhanced by the increasing sherry wood for an aftertaste of great complexity.

The Glenlivet distilled in pots that still use 100 percent malted barley. It is then aged in traditional European and bourbon-seasoned American oak casks to bring forth the delectable flavors. Despite being produced in Scotland, The Glenlivet is the bestselling malt whisky in the United States. It is also the second-best single malt in the world, so you know you're buying the good stuff! No other malt whisky has the legendary status enjoyed by The Glenlivet 12 Year. Its smooth character and tropical fruity notes make it a first-class malt, along with the mineral-rich spring water drawn from the distillery's historic well. So, what does "single malt" mean, anyway? Single malt whisky is simply a malted whisky that has been made from a single distillery. As for the malted part, the whisky is made using malted grains as opposed to unmalted ones. According to Scotch Whisky Regulations, single malt Scotch whisky must be made with malted barley, distilled in a single distillery using pot stills and aged for at least three years. The Glenlivet, being a 12-year Scotch, is aged for 12. It's also a Speyside single malt Scotch, which means that it's produced in the River Spey region in northeastern Scotland. The Glenlivet 12 Year is a vibrant gold hue with a summery nose. Since its palate is well balanced with forward tropical fruit notes, it's best enjoyed neat, on the rocks or with a little water added. At the finish, you'll savor a smooth creaminess with hints of fresh hazelnuts and marzipan.
The Glenlivet 15 Year Old gets its distinctive rich and exotic character from a process of selective maturation in which a proportion of the spirit is matured in French oak casks. In fact, The Glenlivet were one of the first to use French oak for making whisky, a technique that has since been imitated the world over. The Limousin oak used is cut in France’s Dordogne region, where it’s often used to mature cognacs. Its low density allows whisky to sink deep into the wood, and The Glenlivet distillers carefully control how long the whisky matures in the casks so as not to overpower the desired result: a unique, pleasing spiciness.
