From the leading producer of super premium gin in England. Delicate floral notes and aromas capture the uplifting sense of spring. A light, refreshing flavor of botanicals, rounded with subtle notes of honey and orange. Silver Medal- San Francisco Spirits Competition.
Dingle Gin is the product of a considerable amount of research and experimentation, creating a unique gin inspired by tradition but also with a degree of innovation. The gin botanicals are macerated in spirit for 24 hours. Then, when the spirit is distilled, it passes through a flavor basket in the neck of the still. Dingle uses, amongst other botanicals, rowan berry from the mountain ash trees, fuchsia, bog myrtle, hawthorn and heather for a taste of the Kerry landscape, creating a true sense of place and provenance. The spirit is collected then cut to 42.5% abv using the purest of water, drawn from their own well, 240 feet below the distillery. The uniquely Irish botanicals give a fabulously fresh, floral character that perfectly balances the traditional juniper. You really have to taste it for yourself.
All of our spirits are inspired by the Golden State and crafted from locally sourced organic or wild foraged ingredients. We proudly support California wildlife and nature conservation. Distilled and bottled by Golden State Distillery LLC in Sebastopol, California. Every year the California Gray Whale makes a 12,000-mile migration from the warm lagoons of the Baja Peninsula to the cool waters of the Arctic. Our small batch gin is a celebration of this incredible journey.
Distilled in small batches (500 liters) in two different stills using 11 different botanicals including elderflower, chamomile, and yarrow. One batch is made in a Bennet still which produces a heavier spirit (botanicals are macerated) and one is done in a Carter-head still (botanicals are vapor-infused) which produces a lighter spirit. The two are blended together and then infused with rose and cucumbers.

Vastly different from the juniper-heavy gins of the past, No. 209 opens with a beautifully aromatic nose of predominately citrus and floral notes with a hint of spiciness. First across the palate are the citrus high notes, with lemon followed by a hint of orange. As the spirit warms in the mouth, delicate floral notes are liberated from the bergamot and coriander. Mid-palate, there is a pepper-like warmth from the emerging cardamom and juniper. As the cardamom continues to bloom across the palate mint-like components further emerge. The cassia and other warm spice notes become prominent on the finish. The cassia in particular lingers, encouraging another sip.
Premium gin infused with juniper, cucumber, lemon, sage and lavender for a unique aroma and flavor profile. Serves as a perfect compliment in cocktails or simply on the rocks.
