Rare Character Hurst Knoll 7 Year Kentucky Straight Rye Whiskey Kentucky Straight Rye Whiskey | Aged 7 Years | 50.5% ABV (101 Proof) | 750mL | Small Batch | Bottled in Lexington, Kentucky Process & Profile Rare Character Hurst Knoll 7 Year Kentucky Straight Rye Whiskey is a 101 proof rye created to deliver both cocktail strength and neat-pour depth. Developed by Pablo Moix and released under the Rare Character Whiskey Company, Hurst Knoll is built from Kentucky straight rye barrels aged a minimum of seven years, giving it enough maturity to show oak, spice, citrus, caramel, and herbal rye character without becoming overly tannic. This release is positioned as a versatile rye made for classic cocktails while still being enjoyable on its own. The 101 proof bottling strength gives it enough backbone for Manhattans, Old Fashioneds, Sazeracs, and other whiskey-forward drinks, while the seven-year age statement adds more structure than many younger cocktail-focused rye whiskeys. The profile leans bright and balanced, with rye spice, orange zest, caramelized sugar, toasted oak, vanilla, honeyed grain, cracked black pepper, cinnamon, and a lingering spicy finish. For customers looking for a rye whiskey that works equally well behind the bar and in a tasting glass, Rare Character Hurst Knoll 7 Year Kentucky Straight Rye Whiskey is a strong fit. It offers the collectible appeal of Rare Character with a more accessible, purpose-built profile for everyday cocktail use and serious sipping. Tasting Notes Warm rye spice, toasted oak, and caramelized sugar on the nose Orange zest, vanilla bean, and dried herbs Caramel, honeyed grain, and rye bread through the palate Cracked black pepper, cinnamon bark, and citrus peel Balanced oak structure with lively 101 proof strength Medium-to-long finish with spice, light tannins, and herbal rye character What Makes It Special Kentucky straight rye whiskey aged a minimum of seven years Bottled at 101 proof for cocktail structure and sipping depth Developed by Pablo Moix under Rare Character Whiskey Company Built from a union of Kentucky straight rye barrels Designed to shine in classic cocktails while remaining strong neat Balanced profile with rye spice, caramel, orange zest, toasted oak, vanilla, herbs, and pepper Strong option for rye drinkers, bartenders, collectors, and Rare Character fans How to Enjoy Rare Character Hurst Knoll 7 Year Kentucky Straight Rye Whiskey is excellent neat, over ice, or in classic rye cocktails. Neat, it shows its balance of caramel, citrus, oak, pepper, and herbal rye spice. Let it rest in the glass for a few minutes before sipping to allow the seven-year barrel character and 101 proof structure to open. For cocktails, Hurst Knoll is especially well suited to a Manhattan, Old Fashioned, Sazerac, Boulevardier, or Whiskey Sour. Its proof gives it the strength to stand up to vermouth, bitters, citrus, and sweeteners, while its rye spice and orange-zest character add lift and depth to the drink.
Full of aroma and flavour, Redbreast 12 Year Old benefits from a strong contribution from distillates which have matured in Oloroso sherry casks, giving it its trademark Christmas cake character.
When we say “High Rye” we mean it. Redemption High Rye Bourbon has 36% rye content, significantly higher than comparable bourbons. The result is a unique combination of flavors led by the subtle sweetness of classic bourbon and punctuated by rich notes of rye spice. Light hits of vanilla and caramel round out its ‘rye-forward’ flavor and help make it ideal for sipping or creating a classic cocktail. If you’re looking for a bold bourbon, you’ve found it.
A truly easy drinking bourbon distinguished by its subtle ‘rye-forward’ flavor. Handcrafted in the mold of classic American bourbons, it has a well-balanced sweetness highlighted by notes of vanilla and caramel. But we’ve also pushed the Rye content to 21% giving it a light but distinct hint of spice. You’d be quite happy enjoying it on the rocks, but it also mixes easily making it a great cocktail bourbon.
Your first sip of Redemption Rye is more than just a sip, it’s a discovery of rye’s beautifully complex flavors. With a rye content of 95%, well past the 51% required to be considered rye, we’ve recreated the classic American whiskey that ruled our glasses before Prohibition. It brings you the bold taste of genuine rye spice with hints of floral and citrus. While delightful on its own, a slight mint finish makes it ideal for creating distinctive cocktails such as a Manhattan or Old Fashioned.

94 proof (47% ABV) | 750mL | Four-grain wheated bourbon | 30% wheat mash bill | Sonoma County, CA — Redwood Empire Colonel Armstrong is the distillery's "Ode to Wheated Bourbon": its first expression built around wheat instead of rye, launched June 2026 as a core, nationwide addition to the portfolio — not a limited release. The whiskey blends Redwood Empire's own grain-to-glass California distillate with hand-selected 4- to 14-year-old high-wheat bourbons from Kentucky and Indiana, all aged in Northern California's cool, foggy coastal climate. The mash bill runs 30% wheat — more than double many traditional recipes — for a soft, rounded bourbon layered with ripe stone fruit, honeyed grain, and vanilla, a nostalgic hint of a strawberry jam sandwich, gentle baking spice, and a smooth oak finish. It's named for Colonel James Armstrong, who in the 1870s preserved the land that became Armstrong Redwoods State Natural Reserve — each bottle carries GPS coordinates leading to the 1,400-year-old Colonel Armstrong Tree, continuing the brand's conservation tradition of over 1.8 million trees planted since 2019
Redwood Empire Pipe Dream 101 highlights some of our favorite components in our signature bourbon. Maintaining a four-grain mash bill, this reserve expression showcases older whiskey stocks, more of our own grain-to-glass distillate and is cut at a higher proof. The result is a craft whiskey with elevated aromas, rich textures, and bold flavors. We’re proud to share Pipe Dream 101 with you. THE LAND OF ANCIENT GIANTS The Redwood Empire stretches from San Francisco to Humboldt Bay and on to the Oregon border. It is a sparsely populated area with often inaccessible coastline drenched in fog, rocky cliffs, and steep mountains. The region is home to majestic coastal redwoods, some more than 350 feet high and 2,000 years old. The grandeur of these old-growth groves can be experienced throughout our Northern California backyard. The PIPE DREAM Deep in the Patriarch Forest of Humboldt Redwoods State Park, the Coastal Redwood Pipe Dream rises 367-feet from the ancient forest floor. Among the fastest-growing trees ever measured, its majesty and rise to prominence inspires us to reach higher in our pursuit of excellence.

SirDavis is a new, limited-edition rye whiskey created by Beyoncé Knowles-Carter in partnership with Moët Hennessy. This inaugural release is crafted by Dr. Bill Lumsden, featuring a unique 51% rye, 49% malted barley mash bill. Pre-order now for a chance to own this exclusive whiskey, expected to ship in September 2024. Beyoncé Knowles-Carter — the artist with the most Grammy Awards of all time — has teamed up with Moët Hennessy to launch SirDavis, a new brand with an inaugural release in the rye category. It’s the first-ever Moët Hennessy brand developed internally and within the United States (as opposed to an acquisition). The brand is named for Davis Hogue, Knowles-Carter’s paternal great-grandfather. According to a press release, Davis was a farmer and Prohibition-era moonshiner who once stashed bottles in cedar trees to avoid prying eyes. The non-age stated rye is shipped to Texas (Knowles-Carter’s home state) and finished in Pedro Ximenez sherry casks. Blending and bottling (at 88 proof) also takes place in Texas. Brand reps have confirmed that this release exceeds the minimum age requirements for straight rye (i.e. 2 years). Nose: Slightly less herbal and a little more fruit-forward, with a dried oak quality that continues throughout. Palate: The first sip is light and oak-forward, which could be a function of an aging lifecycle across multiple casks. A next progression is decidedly spice then fruit, the rye character bringing (again) cinnamon and nutmeg. Finish: The finish leans away from cereal grain and back into rye spice. It’s lengthy and tannic, reminiscent of a dry, full-bodied Cabernet Sauvignon.
