IPA - Triple | 10% ABV  Commercial Description: Every February a very well-known California brewery releases a famous Triple IPA, and that has inspired us to release our first crack at a triple West Coast IPA!The base of this beer was designed to really highlight the hops, so we brewed with a base of Pilsner malt and then hopped with Mosaic and Citra Incognito in the whirlpool. Fermented with a very expressive Thiol boosting yeast from Omega, and dry hopped to the max with 6lbs per barrel of Phantasm, Nelson Sauvin, NZ Cascade, and Simcoe. This Triple IPA is absolutely seeping with sticky resinous mango, fresh guava, overripe papaya, and lingering notes of dank herbs. We really think this IPA is special and at 10% abv it is scary how approachable and drinkable this beer is…

This hauntingly good brew is rife with dark complexities. Seven malts were used to create deep flavors of coffee, chocolate, caramel, and molasses. A hint of bitterness and herbal character from carefully selected European and American hops help support the monolithic maltiness. After conditioning in stainless steel, the beer was transferred into bourbon barrels. For 8 to 12 months, Dark Apparition waited patiently in oak barrels until the time was right to spring forth with its ghostly gusto. Tough Love is bold but nuanced, an homage of sorts to the traditional Russian Imperial Stouts and the ruling style of Catherine the Great. We construct it with dark roasted malts, malted rye, and oak-smoked wheat, and then banish it in Kentucky bourbon barrels. The aging process smooths out the edges on an otherwise bold statement, and bitterness succumbs to tender strokes of vanilla beans, hints of dried cherries, and new layers revealing themselves with each sip.
