Each batch is a unique blend of our signature three bourbon mash bills and all have different custom chars & toasts – making each bottle unique and different. The barrels selected for this series are the best our inventory has to offer and go through an extensive hand-selection process.

Penelope Bourbon Cooper Series explores the marriage of different cask finishes with our signature four grain straight bourbon whiskey.   Rich and bold on the palate, Valencia brings forward rich citrus flavors from the coasts of Spain.  Valencia is finished in Vino de Naranja casks and bottled at 97 proof.

When we say “High Rye” we mean it. Redemption High Rye Bourbon has 36% rye content, significantly higher than comparable bourbons. The result is a unique combination of flavors led by the subtle sweetness of classic bourbon and punctuated by rich notes of rye spice. A truly easy drinking bourbon distinguished by its subtle ‘rye-forward’ flavor. Handcrafted in the mold of classic American bourbons, it has a well-balanced sweetness highlighted by notes of vanilla and caramel. But we’ve also pushed the Rye content to 21% giving it a light but distinct hint of spice. You’d be quite happy enjoying it on the rocks, but it also mixes easily making it a great cocktail bourbon.

With a rye content of 95%, well past the 51% required to be considered rye, we’ve recreated the classic American whiskey that ruled our glasses before Prohibition. While delightful on its own, a slight mint finish makes it ideal for creating distinctive cocktails such as a Manhattan or Old Fashioned.

Redwood Empire Pipe Dream 101 highlights some of our favorite components in our signature bourbon. Maintaining a four-grain mash bill, this reserve expression showcases older whiskey stocks, more of our own grain-to-glass distillate and is cut at a higher proof. We have built sustainability into everything we do. Our still allows us to distill in a single pass, preserving both water and energy. Local farmers use our nutrient rich mash as feed for livestock. And our state of the art water reclamation facility assures only pure water re-enters our water table.

The One and Only New Orleans Original. Sazerac Rye Whiskey symbolizes the tradition and history of New Orleans. Rye Whiskey that dates back to the 1800’s, around the time when saloons, veiled as Coffee Houses, began lining the streets of New Orleans. It was at the Sazerac Coffee House on Royal Street where local patrons were served toddies made with Rye Whiskey and Peychaud’s Bitters. The libation became known as the “Sazerac” and America’s first branded cocktail was born. This is the whiskey that started it all.
