Barrel Strength pushes the boundaries of our signature four grain balanced flavor profile. Each is blended from three bourbon mash bills aged 3.5 – 5 years in new American oak barrels and completely uncut and non chill-filtered. Each barrel was hand selected and blended into a single batch in order to create this unique offering. Aroma: Sweet caramel with a hints of maple syrup and candied sweetness Forward Notes: Smooth caramel syrup, brown sugar, subtle barrel char, and hints of butterscotch and crème brûlée Body: Sweetness transitions to notes of cinnamon, barrel char, and slight maple syrup Finish: Spicy cinnamon finish with amazing lingering spice and heat.

Penelope Cooper Series pairs our signature straight bourbon with casks from the world’s finest wine-making regions. Inspired by the joy of Brazil, Rio delights the senses with a double cask finish of American honey and Brazilian oak. The two make perfect dance partners, rich and sweet, with surprising depth. It’s a carnival in a bottle. Bottled at 98 proof, Rio's blended four-grain mash bill comprises 74% corn, 16% wheat, 7% rye, and 3% malted barley.

Penelope Bourbon Toasted Series explores new and unique expressions of our signature four grain straight bourbon whiskey. After full maturation in charred new American oak barrels, we finish Penelope Bourbon in a new, freshly toasted barrel. Each batch is a unique blend of our signature three bourbon mash bills and all have different custom chars & toasts – making each bottle unique and different. The barrels selected for this series are the best our inventory has to offer and go through an extensive hand-selection process.

Penelope Bourbon Cooper Series takes our straight whiskeys on a world tour, pairing them with casks from the finest wine-making regions. Rich and decadent, this finish captures the late harvest notes of Tokaji wine from Hungary, once dubbed the “wine of kings” by Louis XIV.

Full of aroma and flavour, Redbreast 12 Year Old benefits from a strong contribution from distillates which have matured in Oloroso sherry casks, giving it its trademark Christmas cake character.

When we say “High Rye” we mean it. Redemption High Rye Bourbon has 36% rye content, significantly higher than comparable bourbons. The result is a unique combination of flavors led by the subtle sweetness of classic bourbon and punctuated by rich notes of rye spice. Light hits of vanilla and caramel round out its ‘rye-forward’ flavor and help make it ideal for sipping or creating a classic cocktail. If you’re looking for a bold bourbon, you’ve found it.

A truly easy drinking bourbon distinguished by its subtle ‘rye-forward’ flavor. Handcrafted in the mold of classic American bourbons, it has a well-balanced sweetness highlighted by notes of vanilla and caramel. But we’ve also pushed the Rye content to 21% giving it a light but distinct hint of spice. You’d be quite happy enjoying it on the rocks, but it also mixes easily making it a great cocktail bourbon.

With a rye content of 95%, well past the 51% required to be considered rye, we’ve recreated the classic American whiskey that ruled our glasses before Prohibition. It brings you the bold taste of genuine rye spice with hints of floral and citrus. While delightful on its own, a slight mint finish makes it ideal for creating distinctive cocktails such as a Manhattan or Old Fashioned.
