The Reserve has only the choicest barrels of this year’s original version of Big Bad Baptist, plus beer from the best barrels from both the Baptista and Triple Barrel Baptist projects. That means it has the faintest touch of barrel-aged coconut, rum, and of course, copious amounts of artisanal coffee and cacao nibs. It does not, however, have any of the spices found in Baptista. ABV: 13.0% Type: Imperial Stout
Fiddler Heartwood Bourbon begins with the same foraged high-wheat mash bill as Fiddler Unison Bourbon. We then finish it on hand-harvested, charred Georgia white oak heartwood staves that we hand-charred and placed in the barrels for the final few months of maturation. In addition to the wheat lending a soft, silky texture and salted caramel, the Georgia staves lend maple, sandalwood, oak, a rounder mouthfeel, for a textured complexity rarely seen in a bourbon.
Fiddler Unison Bourbon marries a foraged high-wheat bourbon, with our own in-house, high-malt bourbon that we distilled by hand on our traditional, double copper pot stills manufactured by Vendome Copper & Brass Works in Louisville, Kentucky.
