Its journey began in the heart of Bourbon country, where we selected exceptional Kentucky Bourbon that came to life in new charred American oak barrels. We transported this treasure westward along the 38th parallel to California, where we finished the Bourbon with our family’s Napa Valley wine barrels. This double-barrel aging technique creates characteristics from the individual barrels that are then blended together to make exceptional Bourbon, far greater than the sum of its parts.

A single year, a single place, in every single drop. In 2012 we laid down rye in our unique Escalator Warehouse V. A decade later we selected the best to be blended and bottled, cask strength and unfiltered. This Kentucky style rye is the result - spice, depth and unmistakable Overholt character.
This is a 100% rye whiskey made with Washington state grain. Look for a tawny hue and distinctly fruity scent layered with a wash of vanilla. The bracing, lean palate shows plenty of vanilla and caramel up front plus a hint of espresso, sparked with fiery cayenne and hot cinnamon on the drying fade. A splash of water coaxes out a pleasing nuttiness and tones down the spicy heat.

Dry Fly is the brain child of Don Poffenroth and Kent Fleischmann, who set out to create whiskey that celebrates the beauty of the country surrounding Spokane, Washington, where the two go fishing. The wheat is sourced from the nearby Co-Ag Cooperative. Following a double distillation, the wheat mash is aged in 53-gallon new American oak barrels with a #3 char for three years.
Dry Fly Port Finish Wheat Whiskey is the same whiskey as our Washington Wheat, aged 3+ years in American Oak and then moved to a Port Wine barrel for an average of 6-12 months. It has a soft port finish and a slightly higher tannin level from the port barrel.
