From the same starting point as their Oak Rye aged in a once-used 10-year bourbon barrel, Widow Jane Distillery wanted to extend the flavor profile of their rye distillate into a new profile, that would make a soothing and fruity rye compared to traditional ryes. In order to create this unique bourbon, the finest barrels are selected and tasted from the best aging warehouses. Only those barrels deemed ‘exceptional’ are then bottled individually, one by one. This preserves the distinct character of each barrel.

Penelope Bourbon Toasted Series explores new and unique expressions of our signature four grain straight bourbon whiskey. After full maturation in charred new American oak barrels, we finish Penelope Bourbon in a new, freshly toasted barrel. Each batch is a unique blend of our signature three bourbon mash bills and all have different custom chars & toasts – making each bottle unique and different. The barrels selected for this series are the best our inventory has to offer and go through an extensive hand-selection process.

Barrel Strength pushes the boundaries of our signature four grain balanced flavor profile. Each is blended from three bourbon mash bills aged 3.5 – 5 years in new American oak barrels and completely uncut and non chill-filtered. Each barrel was hand selected and blended into a single batch in order to create this unique offering. Aroma: Sweet caramel with a hints of maple syrup and candied sweetness Forward Notes: Smooth caramel syrup, brown sugar, subtle barrel char, and hints of butterscotch and crème brûlée Body: Sweetness transitions to notes of cinnamon, barrel char, and slight maple syrup Finish: Spicy cinnamon finish with amazing lingering spice and heat.

The barrels selected to create Bulleit Barrel Strength were emptied and combined into a single batch without the inclusion of any additional water after the whiskey was removed from the barrels. Aged and bottled at Stitzel-Weller in Louisville, Ky., this new offering allows bartenders and fans of great whiskey the opportunity to taste Bulleit Bourbon straight out of the barrel, uncut and non-chill filtered.
